Vinification
Manual harvest with careful selection of separate Colorino and Cabernet grapes, natural spontaneous fermentation on its own yeasts in steel vats with floating cap for about 15-18 days.
Aging
Average stay of 15 months in small oak barrels with separate blends,flnal aging of the union blend in the bottle for a minimum of 12 months.
Organoleptic properties
Intense,dense red color with violet reflections. Blackberry and light vanilla on the nose,soft and full in the mouth,with a herbaceous note.
Pairings
For winter dishes, braised meats, important sauces.
