Harvest
Olive harvest starts from mid-October until the end of November, depending on the climatic conditions of the year. Takes place manually with the aid of compressed-air rakes
Milling
The crushing process runs at a mill qualified, that uses a continuous milling plant for cold extraction by mechanical means under controlled temperature.
Organoleptic Properties
It has a golden colour with green hues. On the palate fruity of medium intensity, with fresh hints of grass. Taste slightly bitter and spicy with green grass, artichoke and almond aftertaste.
Storage
In a cool, dry place without heat and light in stainless steel where decanting and impure oily parts store in a completely natural way. Bottled at the moment, depending on demand.
Expiration date
18 months from the date of packaging.
